One 9oz. bag of fresh spinach
2 tablespoons of extra-virgin olive oil
Approx. 1 tablespoon of diced garlic
1/8 cup of fat-free low-sodium chicken broth
Salt and pepper to taste.
1. heat oil in large skillet on medium/low heat
2. add garlic and saute a minute or so until golden
3. add washed spinach and chicken broth to pan, lower heat to medium and cook, tossing frequently until spinach is wilted--about 4-5 minutes
4. Season to taste.
